Personality & Role Profile

You are a dedicated individual eager to assist the Executive chef, Head chef and Sous Chefs with implementing and maintaining all standards, policies and procedures relating to food quality specifications, preparation, storage and for all Health and Food Safety areas of “Due Diligence” as laid out by management in the Hotel Phoenicia Health & Safety HACCP documents.

Essential Duties & Responsibilities
  • To ensure the food production team provides a consistent quality of food & beverage in the area/shift under his/her control.
  • Ensure all staff report for duty punctually in full uniform, paying attention to personal hygiene, grooming, and adhering to hotel polices on Due Diligence and Health & Safety.
  • Assist Executive Chef / Head Chef(s) in all chef training and development.
  • Ensure that all purchased and prepared foods are labelled, dated and food stocks rotated, kept in legal, hygienic conditions.
  • Assist senior chef on duty with “Checking In” of deliveries: Taking note of Quality, Availability, amounts, prices, items missing and short orders for smooth operation.
  • Ensure all junior chefs are correctly prepared and ready for “Service”.
  • Ensure that all food preparation areas are maintained in a clean and hygienic state.
  • Ensure good kitchen planning with necessary equipment and food stocks to enable a trouble-free service and to maximise customer satisfaction.
  • Together with the Executive chef and senior Chefs, effectively control food cost throughout the various departments of responsibility, keeping close control of agreed costing of approved recipes.
  • Identifies areas for improvement and formulates solutions accordingly to carry out the necessary improvement.
  • Checks on standards, quality of service, and performance through daily inspection, tours, and supervision
  • Ensure that all food produced is served in a timely manner whilst implementing and maintaining all company standards, policies and procedures relating to food quality specifications, preparation, storage.
Desirable Experience, Qualifications, & Attributes
  • Minimum of 4 years culinary experience
  • Previous International 5 Star Experience, Michelin Star, AA rosette or similar Classic European training is considered an asset.
  • Willingness to learn and Excellent attention to detail.
  • Be passionate about food and seasonal ingredients.
  • Positive attitude, professional and welcoming personality.
  • Great team player, flexible and able to work well under pressure in a fast paced environment.
