Personality & Role Profile

You are an energetic and charismatic person thriving to provide a superb level of service to all your guests You will be responsible for the organisation and efficiency of the Hotel’s Food and Beverage Operation in compliance with established hotel policies and achievement of all targets concerning revenues, costs, quality and standards. Will contribute with actions and attitude to the construction of a good atmosphere within the hotel.

Essential Duties & Responsibilities
  • The F&B Manager is responsible for the activities in the various departments/outlets, maintaining and improving, productivity, manpower management, training, creativity and merchandising in order to increase guest satisfaction and sales
  • Leads the Restaurant Operations Manager and the Banqueting Manager and Outlet Manager to instil a sense of One Team attitude throughout all F&B operations
  • Manages the administration and maintenance of the Micros POS system, and ensures that all Menu items and prices are up-to-date
  • Keeps abreast of current of trends and new equipment through literature and supplier information
  • Constantly looking at ways to improve guest satisfaction by ensuring that service standards are being adhered to at all times.
  • Manages the performance of subordinates and take timely corrective measures in order to avoid conflicts.
  • Makes self visible and available to guests and staff so that they will approach him/her as necessary
  • Monitors the Guest Satisfaction Tracking responses together with other guest feedback, identifies areas for improvement, and formulates solutions accordingly in order to achieve the necessary results
  • Checks on standards, quality of service, and food through daily inspection, tours, and supervision
  • Delegates and assigns duties and responsibilities to subordinates as required for developmental purposes
  • Is responsible for preparing and reviewing schedules and vacation plans. Takes action to obtain the maximum productivity during seasonal business cycles to obtain profitable results
  • Prepares monthly objectives in addition to ongoing job responsibilities
  • Works closely with the Sales & Marketing Department in order to reach common goals and provides the necessary support required for site inspections
  • Is actively involved in the creation of new F&B packages and menus
  • Is familiar with the Hotel sales and loyalty schemes, and makes sure to inform staff within the department accordingly
  • Prepares, oversees, and manages departmental budgets and forecasts as required and directed by the Hotel Manager, and recommends items to be included in the Hotel’s capital budget, and ensures adherence with approved budget
  • Participates in the development of the Hotel’s annual business plan by providing input on departmental issues
  • Takes responsibility for cost control within the department; analyses own budget; controls and analyses departmental costs on an ongoing basis, and takes immediate corrective action to control negative deviation
  • Keeps tight control on all stocks; including stationery, replacements, and other items
  • Monitors and manages staff turnover and absence, staff hours and other controllable costs, taking remedial actions where and as appropriate
  • Issues reports on time as required
  • Works closely with the Cost Controller and reacts immediately to losses of stock or revenue, and takes necessary action to prevent future and repeat incidence
  • Holds regular meetings with staff to communicate results and receive feedback, and takes action accordingly to improve the team satisfaction
  • Practices the best leadership skills and motivation to maximise employee productivity and satisfaction, and creates a challenging and a motivating environment
  • Assists in the planning, development, and execution of departmental training in accordance with the training calendar
  • Ensures that induction and on-the-job training for new employees is carried out efficiently and effectively
  • Trains and re-trains staff at least once a year in SOPs
  • Trains employees to be aware of the importance of following defined rules concerning quality, service, salesmanship, guest relations, training, and sanitation
Desirable Experience, Qualifications, & Attributes
  • Proven food and beverage management experience in a 5 Star hotel environment
  • Working knowledge of various computer software programs (MS Office, restaurant management software, POS)
  • Ability to spot and resolve problems efficiently
  • Mastery in delegating multiple tasks
  • Excellent Communication and leadership skills
  • Up to date with food and beverages trends and best practices
  • Ability to manage personnel and meet financial targets
  • Guest-oriented and service-minded
  • Culinary school diploma or degree in food service management or related field
