Personality & Role Profile

You are an energetic and charismatic person thriving to provide a superb level of service to all your guests You will be responsible for the organisation and efficiency of the Hotel’s Food and Beverage Operation in compliance with established hotel policies and achievement of all targets concerning revenues, costs, quality and standards. Will contribute with actions and attitude to the construction of a good atmosphere within the hotel.

Essential Duties & Responsibilities
  • The Food & Beverage Manager is responsible for the activities in the various departments/outlets, maintaining and improving productivity, workforce management, training, creativity and merchandising to increase guest satisfaction and sales
  • Work closely with the other Heads of Departments to ensure a constant flow of information and the best level of mutual trust between all departments
  • Leads the Restaurant Operations Manager and the Banqueting Manager and Outlet Managers to instil a sense of One Team attitude throughout all F&B operations
  • Manages the administration and maintenance of the Micros POS system and ensures that all Menu items and prices are up-to-date
  • Keeps abreast of current trends and new equipment through literature and supplier information
  • Constantly looking at ways to improve guest satisfaction by ensuring that service standards are being adhered to at all times.
  • Manages the performance of subordinates and take timely corrective measures to avoid conflicts.
  • Be visible and available to guests and staff so that they will approach him/her as necessary
Desirable Experience, Qualifications, & Attributes
  • Proven food and beverage management experience in a 5 Star hotel environment
  • Working knowledge of various computer software programs (MS Office, Opera, Micros POS)
  • Ability to spot and resolve problems efficiently
  • Mastery in delegating multiple tasks
  • Excellent communication and leadership skills
  • Up to date with food and beverages trends and best practices
  • Ability to manage personnel and meet financial targets
  • Guest-oriented and service-minded
  • Culinary school diploma or degree in food service management or related field

You are an energetic and charismatic person thriving to provide a superb level of service to all your guests.  You will take charge of wine service within our restaurants in order to deliver an unforgettable experience for our guests.

Essential Duties & Responsibilities
  • To have appropriate product knowledge and effectively communicate with customers
  • To have food knowledge to the standard of a Wine Waiter
  • To provide guidance and supervision to the commis / demi sommeliers
  • To work in close liaison with the floor team to ensure that the service runs smoothly and that all guest requirements are met
  • To promote sales and build up rapport with regular customers
  • To ensure that all liquor stock levels are maintained and correct ordering procedures are carried out, and wine list is maintained with a wide range of high quality wines
  • To ensure the correct preparation of the restaurant for service, with particular regard to the placement of glasses and the preparation of relevant equipment
  • To ensure that all relevant equipment such as glasses, glass washers, silverware and decanters are maintained in clean, good working order
  • To taste and critically evaluate wines, with an eye for possible additions to the wine list
  • To brief floor team on updates to the wine list (such as absences and vintage changes), and wines by the glass
Desirable Experience, Qualifications, & Attributes
  • Proven previous work experience in a 5 Star environment.
  • Extensive knowledge of wines and food pairing.
  • Sales oriented and able to work under pressure.
  • Excellent guest service skills and attention to detail.
  • Flexibility to work in shifts.

  • Very good knowledge of spoken and written English.

Job Description

We are looking for an ambitious individual to join the Food and Beverage Service Team. As Food & Beverage Attendant, you will ensure the smooth running of the assigned station, that the standards are maintained throughout service, and that all reasonable guest requests are met.

The ultimate goal of all our staff is to ensure that our guests enjoy their visit to The Phoenicia Malta so much so that by the time they leave, they are already planning their next visit.
