Assistant Outlet Manager

Personality and Role Profile

You are an energetic and passionate person ready to support the Outlet Manager in the efficient, profitable, and luxury-standard operation of the assigned outlet(s) within a 5-star hotel environment. The Assistant Outlet Manager plays a key hands-on leadership role on the floor, ensuring Forbes Travel Guide and Leading Hotels of the World service standards are consistently delivered, guest satisfaction is maximised, and the team is motivated, trained, and supported.

Essential Duties & Responsibilities

•    Support the Outlet Manager in the daily operation of the outlet(s), ensuring smooth service flow.
•    Supervise service periods, ensuring staff adherence to luxury service rituals and SOPs.
•    Ensure menus, wine lists, pricing, and promotional materials are correctly presented and up to date.
•    Step into operational roles as required during peak periods and special events.
•    Ensure outlet presentation, cleanliness, and ambience meet brand standards at all times.
•    Assist in controlling operational costs, including labour, waste, and breakages.
•    Monitor stock levels and support inventory control of crockery, cutlery, glassware, linen, and equipment.
•    Support cash handling procedures and POS accuracy.
•    Assist with daily revenue reporting and operational checks.
•    Supervise and motivate the service team to achieve high performance and engagement.
•    Assist with staff scheduling, attendance monitoring, and daily manpower allocation.
•    Support recruitment, onboarding, and training of new team members.
•    Deliver on-the-job coaching and support continuous skills development.
•    Act as a role model for professional conduct, grooming, and service behaviour.
•    Ensure compliance with company policies, SOPs, and brand standards.
•    Support the implementation and monitoring of Forbes and Leading quality assurance programs.
•    Ensure health, safety, hygiene, and food safety procedures are followed at all times.
•    Assist in maintaining a safe and secure environment for guests and employees.
•    Ensure effective use of reservation systems, POS, and operational technology.
•    Assist with data collection and reporting as required by the Outlet Manager.
•    Carry out additional administrative and operational tasks as assigned.


Desirable Experience, Qualifications, and Attributes

•    Minimum 3–4 years’ experience in a 5-star hotel or luxury restaurant environment, with at least 1–2 years in a supervisory or assistant management role.
•    Strong understanding of luxury service standards and guest experience delivery.
•    Proven ability to lead and motivate teams on the floor.
•    Solid operational knowledge of food and beverage service.
•    Good organisational and time-management skills.
•    Ability to work under pressure in a fast-paced environment.
•    High standards of personal presentation and professionalism.
•    Very good command of spoken and written English; additional languages are an asset.
•    Familiarity with restaurant management systems (ResDiary preferred).
•    Hands-on experience with POS systems, ideally Micros Simphony.
•    Flexible availability, including evenings, weekends, and public holidays.
•    Holds a valid Food Handling License in accordance with the Food Safety Commission of Malta

Essential Duties & Responsibilities

  • Ensure to acknowledge, deal with and bid farewell to all clients. 
  • Prepare and serve alcoholic and non-alcoholic beverages and snacks.
  • Assess bar customers' needs and preferences and make recommendations.
  • Interact with guests.
  • Conduct follow-up visits to ensure guest satisfaction.
  • Handle payments and make sure charges are accurate.
  • Opening and closing of the bar area.
  • Restock and replenish bar inventory and supplies.
  • Extensive knowledge of the beverage list and food menus
  • Keep a clean and properly laid-up working area.
  • Report any complaints/comments to the Manager/supervisor
  • Inspect equipment and report breakages.
  • Place internal beverage orders from Main Stores.

    Desirable Experience, Qualifications, and Attributes
  • Proven previous work experience in a 5 Star environment.
  • Extensive knowledge of spirits, wines, cocktails, coffee, tea and other beverages.
  • Ability to work under pressure.
  • Excellent guest service skills.
  • Flexibility to work in shifts.
  • Excellent attention to detail.
  • Positive, engaging personality and professional appearance.
  • Very good knowledge of spoken and written English.

  • Have a good knowledge of all food and drinks offered
  • Co-ordinate large bookings with the Manager
  • Greet warmly incoming and departing guests
  • Engage naturally with guests
